Mendocino Sourdough
Our version of French Pain Au Levain, this loaf is distinguished by the slight tang of barley and leavened solely by wild airborne yeast; made from white, barley and whole wheat flours, water and sea salt.

Country Sourdough
Known as Pain de Campagne in France this loaf is similar to the Mendocino Sourdough, with more whole wheat and no barley flour, giving it a nuttier flavor. Made from white & whole wheat flours, water and sea salt.

Red Seal Rye
A sourdough rye sandwich loaf using the North Coast Brewery's Red Seal Ale. Second place winner in the 1992 Bay Food International Bread Tasting Contest. With white and rye flours, ale, water, eggs, olive oil, caraway seeds, caramelized onions, malt and sea salt.

Austrian Sunflower
Our healthiest loaf. Discovered at a small bakery in the Tyrol region of Austria. Hearty and moist, keeps well despite the absence of oil or butter. Made with white flour, sunflower seeds, cracked wheat, oats, barley, polenta, millet, buckwheat, flax seed, soy grits, sesame seeds, water, malt, sea salt and yeast.

Our version of the greatest nonfat New York snack, boiled and baked in the traditional style, with a slight crispness from the brick oven. Made from white flour, sourdough starter, nonfat dry milk, sugar, barley, sea salt and yeast.

SPECIALTY BREADS
Beaujolais Herb Stirato
An unusual, moist bread deriving its name from the shaping process, in which the very elastic and almost liquid dough is "stretched" (stirato in Italian) as it is loaded into the oven. Flavored with Fullers Beaujolais Blend herbs, caramelized onions, fresh black pepper and coarse sea salt. Also made with white and whole wheat flours, water and yeast.

Neopolitan Focaccia
